We're just getting ready to take the EB2 head off of our '76 1200 down to see if it's warped or not. We were looking at the underside and six of the eight valves have a recessed dome in them. Two of them (exhaust) are flat across. What's up? Is this a factory thing, or did somebody just replace two of the valves somewhere along the line. Just curious

By "recessed dome" I assume you mean a depression.
Normally the inlet valves have a depression and the exhaust valves are flat. Someone has definitely replaced at least two valves some time in the past. I'd be a bit worried. I wouldn't be at all surprised if you find the two exhaust valves are in fact inlet valves. You certainly shouldn't use inlet valves as exhausts as they are not designed for the job.
Are you sure it's an EB2 head?
