I don't know anything about ET or ES, but usually you want to go with the engine that flows better. I mean a 16 valve 1.8 liter engine can out-perform an 8 valve 2.0 liter engine. You probably already know that though.

If they have the same amount of valves, you could use the alphabet system... T comes after S, so T is probably a more advanced engine.
